Winemakers Notes

Sanctuary Pinot Noir 2008 is a moderately complex, medium intensity Pinot with good clean fruit and wide appeal.

Bouquet: A soft oaky nose, classically earthy and showing some sweet cherry fruit.

Palate: A coolish entry onto the palate, very soft and appealing tannins, medium weight and a good savoury finish.

Viticulture

Harvest dates: 17th March 2008 – 8th April 2008
Harvesting: Hand and Machine harvested
Sites: Two vineyards in the Wairau Valley

Vinification

Pinot Noir fermentations are conducted anaerobically in stainless steel fermenters before the wines are racked to French oak for maturation. The wine spent nine months in oak prior to bottling.

Bottled: 4th February 2009
Alcohol: 13 %
pH: 3.52
Titratable Acid: 5.5 g/L
Residual Sugar: Dry
Style: Moderately complex, easy drinking

Food Matches

As a lighter style of red wine this Pinot shouldn’t be overpowered by “heaviness” in food matches. Its savory complexity does however make it a good partner to red meats, mushrooms and a wide range of spices. Ideal with a nice beef daube.

Cellaring

Nice now and will cellar for up to five years.
