Winemakers Notes

An easy drinking style of Pinot Gris with some complexity and weight.

Bouquet: Fragrant aromas of passionfruit and pineapple, with musky Turkish delight notes.

Palate: Floral mouth filling and fruity, this wine has a complex medley of flavours including peach and apricot.

Viticulture

The grapes for this wine were picked for a range of flavours, from several Marlborough vineyards.

Harvest dates: 03rd March – 14th April 2008
Harvesting: Machine harvested
Sites: Marlborough’s Wairau Valley

Vinification

Gentle pressing (pneumatic presses) prior to cold setting. The fermentation was carried out in 100% stainless steel tanks, with full temperature control.
Fermentation temperatures were kept low and we utilised carefully selected yeast strains –both helping to emphasise the wine’s aromatic characters. The wine was stop-fermented to retain a small amount of residual sugar which harmoniously balances the wine’s natural acidity.

Titratable Acid: 5.8g/L
Residual Sugar: 6.8g/L
Style: Off-dry, easy drinking style

Food Matches

An excellent aperitif wine, Sanctuary Pinot Gris would also compliment spicy Asian or rich seafood pasta dishes.

Cellaring

This wine is excellent drinking now, but it will also reward up to three years cellaring.
