Winemakers Notes
This is a generous, up-front style of Pinot Gris, soft, full-bodied and mouth filling. It shows excellent ripe fruit, typical of the 2007 Marlborough vintage.
Bouquet: Rich aromas of mandarin and passionfruit. Sweet spice, including mace and cinnamon. Hints of ripe red apple and redcurrents.
Palate: Concentrated flavours of tropical fruits, apricots and peach stones. A rich, oily palate with great mouth feel
Viticulture
The grapes for this wine were picked for a range of flavours, from several Marlborough vineyards.
Harvest dates: 30th March – 19th April 2007
Sites: Marlborough’s Wairau Valley
Vinification
A focus on flavour attainment and conservation is a
characteristic of the Sanctuary style. The wine underwent a controlled stainless-steel fermentation, with fermentation being stopped before dryness to retain some natural sweetness.

Style: Off-dry, easy drinking style

An excellent aperitif wine, Sanctuary Pinot Gris would also compliment spicy Asian or rich seafood pasta dishes.
Cellaring
This wine is excellent drinking now, but it will also reward up to three years cellaring.
